Honey Raspberry Flapjacks

Ingredients

  • 150g butter
  • 150g light brown soft sugar
  • 4 tbsp honey
  • 300g porridge oats
  • 100g fresh or frozen raspberries

Directions

  1. Heat oven to 200c/180c fan  and line a 20 x 20cm baking tin with parchment. 
  2. Melt the butter, sugar, honey and a pinch of salt in a saucepan. When everything is combined and the mixture is bubbling, stir in the oats.  
  3. Tip the oats mixture into the lined baking tin and press down to firm.
  4. Sprinkle on the raspberries and lightly press them into the oaty mixture.
  5. Bake for 25 – 30 minutes until golden brown. Leave to cool, then turn out and cut into 9 or 12 flapjacks. 

Tips

Another Scottish recipe – have these as a snack or serve warm with cream as an indulgent dessert. They can also be frozen.
