Honey Raspberry Flapjacks

Ingredients
- 150g butter
- 150g light brown soft sugar
- 4 tbsp honey
- 300g porridge oats
- 100g fresh or frozen raspberries
Directions
- Heat oven to 200c/180c fan and line a 20 x 20cm baking tin with parchment.
- Melt the butter, sugar, honey and a pinch of salt in a saucepan. When everything is combined and the mixture is bubbling, stir in the oats.
- Tip the oats mixture into the lined baking tin and press down to firm.
- Sprinkle on the raspberries and lightly press them into the oaty mixture.
- Bake for 25 – 30 minutes until golden brown. Leave to cool, then turn out and cut into 9 or 12 flapjacks.
Tips
Another Scottish recipe – have these as a snack or serve warm with cream as an indulgent dessert. They can also be frozen.
